Ingredients
  

For the Pork Steaks

  • 1.5 to 1.6 lbs / 700-750 g pork neck steaks (I used 720 g and got 6 steaks total)
  • To taste salt and freshly ground black pepper

For the Vegetable Layer

  • 3 large onions ( sliced into half-rings )
  • 2 medium yellow bell peppers ( thinly diced or sliced )
  • 1 pinch salt (essential for maximum aroma and flavor extraction)
  • 1 tbsp cooking oil ( for sautéing the vegetables )

For the Rich Mayo Flavor Topping & Cheese

  • 3 tbsp mayonnaise
  • 1 tbsp sour cream
  • 1 tsp honey
  • 1 tsp mustard
  • ½ tsp smoked paprika
  • ½ tsp sweet paprika
  • ½ tsp dried oregano
  • 1 to 1.5 cups / 120-150 g cheese (such as Gouda, Tilsiter, or Monterey Jack), shredded

For Serving

  • To taste fresh herbs ( such as chopped parsley or dill )

Instructions
 

  • Slice the pork neck into steaks about 1–1.5 cm (½ inch) thick. If your steaks are thicker, gently pound them with a meat mallet until they reach an even thickness. Pat the steaks dry with paper towels, then season both sides evenly with salt and freshly ground black pepper. Arrange the steaks in a single layer in your baking dish, making sure they fit without overlapping.
  • In a medium bowl, combine 3 tablespoons mayonnaise, 1 tablespoon sour cream, 1 teaspoon honey, 1 teaspoon mustard, ½ teaspoon smoked paprika, ½ teaspoon sweet paprika, and ½ teaspoon dried oregano. Stir until smooth and well combined.
  • Preheat your oven to 170°C / 340°F. Using a spoon or spatula, spread your thick gourmet mayo sauce mixture directly over the seasoned pork steaks, covering the meat completely. Next, layer your sautéed onions and yellow peppers evenly right on top of the mayo layer.
  • Cover the baking dish tightly with a sheet of aluminum foil, crimping the edges well so no steam escapes. Bake in the preheated oven at 170°C / 340°F for 45 to 50 minutes. Because all ovens run differently and meat thickness varies, check the pork near the 40-minute mark by carefully lifting a corner of the foil and piercing a steak with a fork; it should feel soft and nearly tender before you proceed.
  • Once the pork is soft, carefully remove the aluminum foil completely. Sprinkle your shredded cheese evenly over the top of the onion and pepper layer. Return the dish to the oven uncovered for 10 to 12 minutes until the cheese is completely melted, bubbly, and turning a beautiful golden brown.
  • Let the pork steaks rest for a few minutes before serving to allow the juices to settle back into the meat. Garnish with freshly chopped parsley or dill, and enjoy your warm, comforting homemade meal!

Notes

  • Oven Variations: Every oven heats differently! Always check your pork near the 40-minute mark by piercing a steak with a fork. It should feel soft and nearly tender before you remove the foil and add the cheese.
  • Meat Thickness: If your pork neck steaks are unevenly cut, make sure to gently pound them with a meat mallet to an even 1 to 1.5 cm thickness so they bake uniformly.
  • Resting is Key: Don’t skip the final 5-minute rest! Letting the steaks sit allows the rich juices to settle back into the meat so every bite stays ultra-juicy.
