  • 3 slices square white toast bread (or sandwich bread)
  • 1 tablespoon mayonnaise (about 1 teaspoon spread per slice)
  • 1 medium ripe tomato (cut into thin slices)
  • 2 tablespoons unsalted butter (melted)
  • 1 tablespoon fresh or dried parsley (mixed into the melted butter)

Ingredients for the Creamy Scrambled Eggs:

  • 3 medium eggs
  • 1.5 tablespoons sour cream
  • 2 teaspoons unsalted butter (melted)
  • 1/4 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • A small pinch of freshly ground black pepper
  • 1/2 teaspoon fresh or dried parsley

Garnish (Optional)

  • 1 teaspoon fresh parsley (finely chopped)
  • A small Pinch smoked paprika

Instructions
 

  • In a small bowl, melt 2 tablespoons of unsalted butter and stir in 1 tablespoon of fresh or dried parsley. Toast your 3 slices of square white bread until golden brown and crispy, then brush or drizzle the warm parsley butter evenly over each slice.
  • Spread a thin layer of mayonnaise evenly over the buttered toast (about 1 teaspoon per slice). Place your thin, paper-thin tomato slices flat on top of the mayonnaise layer and set the prepared toasts aside.
  • In a mixing bowl, crack 3 medium eggs. Add 1.5 tablespoons of sour cream, 2 teaspoons of melted butter, 1/4 teaspoon of smoked paprika, 1/2 teaspoon of salt (or to taste), and a small pinch of black pepper. Whisk vigorously until perfectly smooth with no streaks remaining.
  • Pour the egg mixture into a quality non-stick frying pan over medium-low heat. Let it sit for about 10 seconds, then use a silicone spatula to continuously and gently push the egg curds from the outer edges into the center to create soft, pillowy folds.
  • As soon as the scrambled eggs look glossy, velvety, and slightly wet, immediately remove the pan from the heat. Divide the warm, creamy eggs evenly on top of the tomato layers across all 3 toasts and serve immediately while hot!
